KITCHEN CORNER: Low Carb Cheesesteak Skillet

Do you ever open your freezer and think “Wow, some of this has got to go?” Well that was certainly me this week. I have lots of meat and frozen veggies in my freezer that I need to get rid of so I can make room for new things. One of the items that needed to go was ground beef.
I have been so uninspired by ground beef lately. I make tacos, spaghetti and stuffed peppers all the time, I just wanted something new. I went on a Pinterest rampage and found something that was really wonderful actually so I thought you all may enjoy it too. This is another one of those recipes that is good for the Keto/low carb dieter while also just being tasty.
Low Carb Cheesesteak Skillet
Ingredients: 1 and ½ pounds of ground beef, 1 red, 1 orange and 1 yellow bell pepper, 2 green bell peppers, ½ a cup of thinly sliced mushrooms, 3 ounces of provolone cheese, 3 ounces of gruyere cheese, 1 tablespoon of steak seasoning, 1 tablespoon of olive oil,
Instructions: Heat a large oven proof skillet on medium high heat. Add the ground beef and steak seasoning to the skillet and cook until brown. While the ground beef is browning, heat another skillet on medium high heat. Add the oil and vegetables to this skillet. Sauté the vegetables until cooked through.
Once the ground beef is brown, drain grease from the meat and add back into the skillet. Pour the cooked vegetables onto the ground beef and mix well. Sprinkle the cheese over top and place in oven on broil. Broil until the cheese is melted and starting to brown.
Serve as is for a low carb dish or add jasmine rice if that is not something you are worried about. Enjoy this easy week night dinner.
